Yes, ostrich eggs are edible and are similar in flavor to chicken eggs, though often described as slightly richer, sweeter, and buttery. They are the largest eggs laid by any bird and can be cooked in similar ways to chicken eggs.

Try this perfect omelet recipe on your next camping trip. 

Step 1

Take one ostrich eating egg and shake it out into a large bowl. Take a whisk and blend it all together because the albumen is very thick (why it is so fluffy).

Step 2

Have everyone bring their favorite omelet fixin’s such as bacon, sausage, veggies, peppers, salsa, cheese, etc.

Step 3

Get a gallon size Freezer Ziploc bag and write each person’s name on a bag with a permanent marker.

Step 4

Use ½ cup of egg mixture per bag and allow everyone to add their own favorite ingredients.

Step 5

Squeeze out all the air, seal, and drop the bags into a large pot of boiling water.

Step 6

It usually takes about 20 minutes or so but you know it is done when you squeeze the omelet in the bag and no moisture squishes out. Simply roll the omelet out, eat and enjoy. I even like putting them in a flour tortilla for a great breakfast taco.

Ostrich eating eggs are available at Rooster Cogburn Ostrich Ranch during laying season, usually from February thru July, and are scored on one end so that you are able to remove the egg for eating but still keep the eggshell.  You get to have your egg and eat it too!
