Be The Star On The Next Camping Trip
Let’s face it – camping is all about having fun, doing something different, and laughing and escaping from our everyday pressures. Why else would we leave our climate-controlled homes, indoor plumbing, and soft comfortable beds to sleep on air mattresses that lose all the air during the night while being pestered by flying and crawling critters and awakened by scurrying animals trying to raid the food stash? So you might as well enjoy it anyway and be the hit of the next camping trip! Try an Ostrich Egg Omelet on your next camping trip. They are perfect for a multitude of reasons, the first one being that they do not have to be refrigerated while they are in the shell. They can go over a week without refrigeration. One egg will feed a whole bunch of campers as one ostrich egg is equivalent to 24 chicken eggs.

Step 1
Take one ostrich eating egg and shake it out into a large bowl. Take a whisk and blend it all together because the albumen is very thick (why it is so fluffy).
Step 2
Have everyone bring their favorite omelet fixin’s such as bacon, sausage, veggies, peppers, salsa, cheese, etc.
Step 3
Get a gallon size Freezer Ziploc bag and write each person’s name on a bag with a permanent marker.
Step 4
Use ½ cup of egg mixture per bag and allow everyone to add their own favorite ingredients.
Step 5
Squeeze out all the air, seal, and drop the bags into a large pot of boiling water.
Step 6
It usually takes about 20 minutes or so but you know it is done when you squeeze the omelet in the bag and no moisture squishes out. Simply roll the omelet out, eat and enjoy. I even like putting them in a flour tortilla for a great breakfast taco.
Seasonal Ostrich Egg Treats
Ostrich eating eggs are available at Rooster Cogburn Ostrich Ranch during laying season, usually from February thru July, and are scored on one end so that you are able to remove the egg for eating but still keep the eggshell. You get to have your egg and eat it too!
